Avocados are very good. The problem is that we produce very little of them in France, that they come from the other side of the world, that their cultivation requires up to 100,000 liters of water per day per hectare, and what's more, they don't keep!

That's quite a few reasons to want to reinvent the guacamole recipe, French style! We keep the hallmarks of the guacamole recipe (lime, cilantro, onion, hint of tomato) and replace the avocado with peas! And the result is really, really, really, really good.
