Our fir honey is distinguished by its distinctive flavor and deeply woody aroma. Each drop transports you to the heart of the forest, its taste both sweet and intense, with slightly resinous notes and delicate nuances of menthol. This vintage is harvested in the heart of the Monts d'Ardèche Natural Park.
The main difference between fir honey and conventional honey lies in their nectar source. Most "conventional" honeys are produced by bees that forage for nectar from flowers.
On the other hand, fir honey, also known as "fir honeydew," is produced from the honeydew secreted by aphids. Aphids feed on the sap of trees, especially fir trees, and excrete a sweet substance called honeydew. Bees, attracted by this sweet substance, collect it and process it into fir honey in the hive.
The harvest period for fir honey in Ardèche generally falls between July and October.
