Cashew oil is a rare, mild, and very fine oil. This virgin oil is produced by toasting cashew nuts and then mechanically pressing them. Use as a seasoning with green salads and raw vegetables, or a small drizzle will enhance pan-fried shrimp or grilled meats.
It goes very well with Asian fried noodles and in pastries it can also be used with chocolate, shortbread, dried fruit muffins, figs.
