Nothing is wasted, everything is transformed. As early as late autumn, the two local eggplants, "Bou Shawki" and "El Homsi," are given a second life. Pickled and then stuffed according to a recipe passed down through the generations, they are carefully preserved in preparation for the long winter months. Traditionally carried out by rural women, the preparation of "makdous" plays an important role in their emancipation.

Grown in the Lebanese region of Qaa, on fertile soil that benefits from hot, dry summers, our eggplants are considered the best in the country. They benefit from an ideal climate, conducive to the full blossoming of their flavors.
The eggplants are stuffed with walnuts, sweet peppers and garlic.
Enjoy them, for example, with a slice of bread and tomato slices, or place them on a green salad for a tangy touch. A perfect addition to mezze, appetizers, or brunches, they'll delight your taste buds! They replace traditional Italian antipasti for a gourmet aperitif and can also complement your sandwiches, barbecues, and vegetarian dishes.
