At the right degree of ripeness, the vegetables are selected, cut into fillets or pieces, blanched or macerated in an acidulated solution, and finally put in jars and flavored by prolonged maturation in extra virgin olive oil. Thus prepared from fresh products, our minces retain all the original nutritional benefits: the flavor, aroma and taste are reminiscent of minces prepared at home according to ancient Mediterranean traditions.
