Brillat-Savarin is a triple-cream cheese with a mild taste that is best eaten young and fresh. It is produced in the Burgundy region.

Containing at least 30% fat in the finished product, produced from cow's milk, it is a soft cheese with a bloomy rind. Its small 100-gram format comes in the form of a 6.5cm flat disc.

Its optimal tasting period extends from April to October after a 12-day maturation, but it is also excellent from March to December.
