Our eels live in the flowing waters of the Achelous River, which rises at an altitude of over 2,200 meters and flows into the Ionian Sea. A river with crystal-clear waters and a strong flow, this forces the eels to swim constantly, giving them firm, delicate, and very tasty flesh. They are smoked by hand over olive and beech wood for 2 hours, then delicately filleted.
