A specialty of Aix en Provence, the calisson is made from a mixture of finely ground sweet almonds, candied melon, and orange peel, all topped with a wafer sheet and a white glaze. In true traditional style, this calisson offers a dual texture; the crunchiness of the glaze and the softness of the dough, as well as a perfect balance between the flavors of almond, melon, and orange peel.
